Tzatziki Sauce

This is a quick tzatziki sauce that provides a nice, “crisp” taste to things. I mainly use it when making gyro meat, but also sometimes as a salad dressing. I like a bit of “bite” to the sauce, but if that is not your style, the lemon juice and vinegar may be omitted. The sauce is a little chunky as well. For something smoother, you may perhaps finely chop the grated cucumber after squeezing the water out of it, or run the sauce through a blender after combining everything.

Ingredients

  • 1 English cucumber
  • 3/4C Greek yogurt
  • 1/4C mayonnaise
  • 2T fresh dill, chopped finely
  • 2 garlic cloves, minced
  • 1t salt
  • 1T olive oil
  • 1T white vinegar
  • 1T (or about half a lemon squeezed) lemon juice

Steps

  1. Finely grate the cucumber. I use the smallest grate size on a box grater letting the strips fall into a cheese cloth resting over a plate or pie pan. Then, squeeze as much water as possible out of the grated cucumbers using a cheese cloth, dish towel, or if necessary, paper towel.
  2. Add the pressed cucumber into a small mixing bowl along with the rest of the ingredients, and mix well.
  3. Taste and adjust seasoning, (salt, vinegar, and lemon juice mostly).
  4. Optionally let rest for at least 15 minutes before using.
